The OEM MY00-03 (AP1) wheel sizes and offsets are as follows:
Front:
16" x 6.5", +55 offset, 205 tire
Rear:
16" x 7.5", +65 offset, 225 tire

I know for a FACT that the last year of production of the S2000 is 2003!!!!!
After that, it will be the S2200 under an assumed name.

Is a 225 tire safe for a 8 in wide rim, and is a 205 tire safe for a 7 in wide rim?

Not sure what you mean? A 225 will fit just fine on a 8 inch wide rim, maybe a little narrow. Same for the 7 inch wide rim with a 205. The 7.5 rim on the S2000 fits a 245/45 just fine (in fact thats what you should be using).

You should be looking at the tire manufacturer to answer your question. Each tire manufacturer will list a minimum rim width, maximum rim width, and optimal rim width, for each tire they make. Note these numbers are not guaranteed to be identical from tire to tire, brand to brand. In other words, there is no universal answer to your question, but getting that answer is trivial with a quick trip to the mfg's website.

You should be ok with those sizes as long as the offset is correct.

If there's any doubt, talk to Jim at the Tire Rack about sizes. He's very knowledgable.
